To resist corrosion and dents, the Southbend HDG-36-M griddle is constructed of aluminized and stainless steel. Rear and side splashes prevent liquids and food debris from getting on walls and other equipment, while a grease drawer collects liquids and debris so when the operator finishes cooking, messes are quick to clean up. For stability, its 4-inch-tall legs lift the griddle off the countertop.

Manual controls range from low to high heat settings, enabling chefs to know what setting product needs to be cooked on. Natural gas heats the U-shaped burners that are spaced 12 inches apart across the griddle plate, which is 1-inch thick to resist bending and misshaping. The Southbend HDG-36-M griddle has double-insulated sides that keep heat on the plate.
