Both base sections have a corresponding swing-out door with a recessed handle so operators can retrieve products from a specific section, minimizing temperature fluctuations. The LED-lighted interior provides 15 cubic feet of storage space and features two stainless steel wire shelves that resist rust and corrosion and can be wiped clean when needed. When a door is opened, the fan shuts off air circulation to maintain cool interior temperatures. The unit's top section features a pan area that accommodates the 18 included sixth-size, 4-inch-deep condiment pans capable of holding prepared meats, cheeses, and vegetables. Its polyethylene cutting board measures 72⁵/₈ inches wide by 9¹/₂ inches deep by ¹/₂ inches thick to provide ample space for food prep.

As inventory changes, operators can set the unit's temperature from 33 to 39 degrees Fahrenheit with the digital temperature control. The monitoring system provides an accurate, external digital display so staff can quickly discern the table's temperatures. While air circulates evenly in the refrigerated base, the cold bunker system uses a forced-air mechanism to create a cold air shield encompassing the food pan area, maintaining food temperatures lower than 41 degrees Fahrenheit to uphold food safety standards. To preserve generated chill, the cabinet and its doors are foamed in place with CFC-free, high-density polyurethane insulation, and the pan area is equipped with an insulated cover. The self-contained refrigeration system operates with eco-friendly R-290 hydrocarbon refrigerant, while its self-cleaning condenser removes dust buildup daily to maintain efficiency. To prolong its service life, its coated evaporator resists corrosion.

To endure back-of-house use, the Turbo Air TST-48SD-18-E-N food prep table features a stainless steel interior and exterior with a galvanized steel exterior back and bottom. Both metals are durable, simple to clean, and corrosion and rust resistant. This unit measures 72⁵/₈ inches wide by 38 inches deep by 44⁵/₈ inches high and is positioned on 4-inch-diameter casters that provide smooth mobility when movement is required.
