With a 36-inch-wide griddle top and standard oven base, the Vulcan 36S-36G Endurance® restaurant range can be used to both grill and bake. The griddle's 3/4-inch-thick surface is built to withstand repeated heating and cooling and disperses temperature evenly to minimize cold spots. Operators can adjust the griddle's heat with the front-mounted burner knobs, which are made of a high-temperature-resistant material that remains cool to the touch. To ease cleanup, it features a backriser, splash guards along the sides and back, a 4-inch-wide front grease trough, and an extra-deep pull-out crumb tray with welded corners.
The standard oven base's interior measures 26 3/8 inches wide by 27 inches deep by 14 inches high, boasting a baker's depth that accommodates full-size sheet pans inserted side to side or front to back. The interior's two rack guide sets accommodate two racks in four different positions. To broil, roast, or bake dishes, the temperature can be set from 250 to 500 degrees Fahrenheit or at a low setting for reheating. For resiliency and simplified cleaning, the base and door panel are made of porcelain. Its hinged door provides direct access to the interior to ease pan insertion and retrieval.

This resilient metal resists rust, corrosion, and wear, and for additional strength, its chassis is fully MIG welded. Additional supplies and ingredients can be stored within close reach on the unit's lift-off high shelf. For stabilization on sloped or uneven flooring, this 36-inch-wide by 34-inch-deep by 58-inch-tall unit is fitted with 6-inch legs that can be raised or lowered.
