The Vulcan 36S-36G Endurance® gas range measures 36 inches wide by 34 inches deep by 58 inches high and features a 36-inch-wide griddle top with a standard oven base so operators can perform multiple cooking tasks with one unit. To endure high-volume use in fast-paced kitchens, its front, sides, backriser, and lift-off high shelf are made of corrosion- and rust-resistant stainless steel, while its chassis is fully MIG welded for additional strength. Because it's positioned on adjustable 6-inch-tall legs, it can be modified to level the unit on irregular flooring.

The griddle's 3/4-inch thickness warms evenly to minimize cool spots, is durable enough to endure repeated heating and cooling, and retains heat after use. Operators can adjust the surface's heat with the corresponding burner knobs, which are made of a temperature-resistant, cool-to-the-touch material to enhance user safety. During cooking, the integrated backriser and side splash guards contain popping oil within the unit to minimize the need to clean adjacent surfaces. To ease cleaning between uses, it features a 4-inch-wide front grease trough and an extra-deep pull-out crumb tray with welded corners.

The Vulcan 36S-36G natural-gas-powered range's base features a standard bakery-depth oven that accommodates full-size pans inserted front to back or side to side. To achieve various results, the two included racks can be placed in four rack positions with the two rack guide sets. Staff can simply access the interior to insert and remove pans by opening the hinged spring door. For baking, broiling, roasting, or reheating, the interior temperature can be adjusted from 250 to 500 degrees Fahrenheit or set to a low-temperature mode. To withstand high temperatures and ease cleaning between uses, the base and door panel are made of porcelain.
