The Vulcan 48C-2B36GT Endurance® restaurant range is a three-in-one unit comprised of two burners, one griddle, and a convection oven. While the stovetop features two burners on the left side and a 36-inch-wide griddle on the right side, the convection oven is positioned beneath these units for convenience. This 48-inch-wide by 34-inch-deep by 58-inch-tall unit's front, sides, backriser, and lift-off high shelf are made of stainless steela€”a durable rust- and corrosion-resistant metal that ties into most back-of-house themes. For additional rigidity, its frame is fully MIG welded. To stabilize the unit on irregular flooring, it's fitted with 6-inch stainless steel legs that can be raised or lowered.

A flashtube pilot system lights both of the unit's burners, and its shrouded design provides lasting durability. Each burner features a heavy-duty cast grate with an integrated aeration bowl for enhanced efficiency. The front grate measures 12 inches by 12 1/2 inches, while the rear grate measures 12 inches by 14 1/2 inches to accommodate stock pots or large pans. Operators can adjust the burners' heat with the corresponding cool-to-the-touch knobs. The griddle built onto the stovetop's right side measures 3/4 of an inch thick to withstand repeated heating and cooling and retain heat to reduce lag times during reheating. Staff can adjust the griddle's temperature with the corresponding snap-action thermostatic controls. Because it's built with side splash guards and a backriser, it can contain oil from popping onto the burners and adjacent areas to maintain a clean workspace. For quick cleanup between uses, it features a 4-inch-wide grease trough and an extra-deep pull-out crumb tray.

The Vulcan 48C-2B36GT natural-gas-powered range is built with a convection oven so dishes can be baked, broiled, or roasted quickly. This oven uses a fan to circulate radiant heat, and employees can adjust temperatures between 250 to 500 degrees Fahrenheit. Its 26 3/8-inch-wide by 24-inch-deep by 13 7/8-inch-tall interior accommodates full-sized sheet pans inserted side to side on its two oven racks. So the racks can be secured in various positions, this unit includes two rack guide sets and four placement options. To ease cleaning, the base and door panel are made of porcelain.
