The Vulcan 48C-4B24G Endurance® natural-gas-powered range features a 24-inch-wide griddle on its right side and four open-top burners on its left side so operators can saute, grill, sear, boil, and steam various dishes on a single surface. Once operators adjust the griddle's heat with the corresponding controls, the 3/4-inch-thick griddle plate warms evenly and retains heat to accommodate consecutive use. Its side splash guards and backriser minimize the chance of hot oil popping onto the burners or adjacent surfaces, reducing cleanup requirements. To simplify grease and food debris removal, it's built with a 4-inch-wide front grease trough and an extra-deep pull-out crumb tray. The four left-side burners feature heavy-duty cast grates with integrated aeration bowls to keep burner flames even and strong. While the front grates are sized for saucepans or small pots, the rear grates accommodate large stock pots. The two shrouded, energy-saving flashtube pilot systems each control two burners, and staff can adjust temperature with the cool-to-the-touch burner knobs.
The convection oven base circulates high heat with a fan to cook dishes faster than standard ovens. Great for retherming, baking, roasting, or broiling various foods, its thermostat can be set from 250 to 500 degrees Fahrenheit or at a low-temperature setting. Its 26 3/8-inch-wide by 24-inch-deep by 13 7/8-inch-tall interior is equipped with two oven racks and two rack guide sets that can be placed in four positions. Its standard-depth cavity accommodates full-size pans positioned side by side. To ease pan insertion and removal, its integrated hinged door features a spring mechanism, and the door's handle remains cool to the touch during bake cycles. For simple cleanup between uses, its base and door panel are made of durable porcelain.
To conserve space, the Vulcan 48C-4B24G restaurant range measures 48 inches wide by 34 inches deep by 58 inches high. It's positioned on 6-inch-tall stainless steel legs that can be raised or lowered to stabilize the unit on irregular surfaces. Its front, sides, backriser, and lift-off high shelf are made of rugged stainless steel that resists corrosion and simplifies cleaning. For added strength through high-volume use, its frame is fully MIG welded.
