Vulcan 48C-8B 48" 8 Burner Gas Range W/ Convection Oven, Liquid Propane
So operators can boil, simmer, fry, roast, broil, and bake dishes simultaneously, the Vulcan 48C-8B Endurance® gas restaurant range features eight open burners and a convection oven. The eight burners each output 30,000 BTUs per hour, and to reduce gas usage, one shrouded flashtube pilot system powers two burners. To accommodate small or medium cookware, the front grates measure 12 inches by 12 1/2 inches, while the 12-inch by 14 1/2-inch rear grates are great for large stock pots and saucepans. For creating an even and strong burner flame, the grates are built with integrated aerated bowls. The front-mounted burner knobs remain cool to the touch so operators can safely control heat. For simple cleanup after use, its extra-deep crumb tray can be pulled out to remove food debris.
The oven base uses convection heat, which cooks faster and more evenly than standard ovens. This 35,000-BTU unit can be set at a low-heat setting or from 250 to 500 degrees Fahrenheit. Its 26 3/8-inch-wide by 24-inch-deep by 13 7/8-inch-tall interior accommodates full-size pans side to side on its two oven racks and can pe positioned in four possible orientations. Staff can load and remove pans with ease due to the oven door's hinged, spring-assisted mechanism. For enhanced safety, the door's handle remains cool to the touch when the interior is hot. To ease cleaning, its door panel and base are made of porcelain.
The Vulcan 48C-8B restaurant range measures 48 inches wide by 34 inches deep by 58 inches high to conserve space in compact kitchens. For stabilization on sloped or uneven flooring, it rests on 6-inch-tall stainless steel legs that can be lowered or raised as needed. Its front, sides, backriser, and lift-off high shelf are made of stainless steel to resist rust, and its chassis is fully MIG welded, providing additional strength against high-volume use. Ingredients, supplies, and additional contents can be placed on the high shelf for convenient storage.
