The Vulcan 72CC-6B36G LP gas restaurant range is powered by propane to evenly generate and distribute heat across its six burners. These burners use a series of shrouded flash tube pilot lights to ensure adequate heat distribution and reduce mechanical failure risks. It measures 72 inches wide by 41 inches deep by 58 inches high and rests atop 6-inch legs that can be adjusted to a comfortable working height. Its stainless steel body has a MIG-welded frame for maximum durability. Its griddle measures 36 inches across and has a four-inch-wide grease trough on the front to catch drippings and simplify the cleaning process. Beneath its stove top is two convection ovens, each of which includes three racks that can hold full-size sheet pans side-to-side and reach temperatures between 250 and 500 degrees Fahrenheit; it also features a low setting.

The Vulcan 72CC-6B36G LP gas range and convection oven is equipped with a wide variety of utility features to ease operation. Each of the burner tops can be easily removed for cleaning, and the unit has a pull-out crumb tray with welded corners to contain messes. The unit's heat is controlled using a series of cool-to-the-touch control knobs, and the oven racks can be moved and adjusted depending on the dish. To keep popular ingredients within arm's reach, the unit includes a stainless steel back riser with a single shelfa€”ideal for holding herbs and spices above the cooking area. The unit outputs 310,000 total BTUs per hour and is fueled through its 1-inch rear gas connection with a pressure regulator.
