The Vulcan 72SC-8B24GT Endurance® restaurant range features eight open-top burners on its left side and a 24-inch-wide griddle on its right side, meaning chefs can boil, simmer, saute, fry, and cook various dishes simultaneously. Each burner outputs 30,000 BTUs per hour, and to save energy, one shrouded flashtube pilot system powers two burners. These burners all feature lift-off heads, heavy-duty cast grates, and integrated aeration bowls. The three 12-inch by 12 1/2-inch front grates are sized for small or medium cookware, while the three 12-inch by 14 1/2-inch rear grates accommodate large sauce pans or stock pots. To adjust the burners, staff can use the cool-to-the-touch knobs, and for quick cleanup, the grates can be lifted off and the extra-deep crumb tray pulled out.

The griddle's 3/4-inch-thick plate is durable enough to survive repeated heating and cooling, and to expedite reheating for consecutive use, it retains warmth. Because this section has corresponding snap-action thermostatic controls, users can set precise temperatures to achieve various results. Operators can remove grease residue from the 4-inch-wide front-mounted grease trough to simplify cleaning.

The Vulcan 72SC-8B24GT commercial range's base features a standard oven on the left and convection oven on the right to meet different baking needs. Chefs can modify each oven's temperature from 250 to 500 degrees Fahrenheit or simply set it to low heat. While the standard oven's baker's-depth interior measures 26 3/8 inches wide by 27 inches deep by 14 inches high, the convection oven measures 26 3/8 inches wide by 24 inches deep by 13 7/8 inches high. Despite the different dimensions, they both accept full-size food pans. The standard oven includes two oven racks that can be raised or lowered in four positions, and the convection oven has three oven racks. To ease pan insertion and retrieval, the ovens are built with hinged doors and cool-to-the-touch handles.

Because this four-in-one range measures 72 inches wide by 41 inches deep by 58 inches tall, it's great for compact kitchens. Its front, sides, backriser, and lift-off shelf are made of durable stainless steel that resists rust, corrosion, and wear and is simple to wipe clean between uses. For added strength, the aluminized steel frame is fully MIG welded. Its 6-inch-tall legs can be raised or lowered to stabilize the unit on uneven or sloped flooring, reducing the chance of rocking or wobbling during operation. Powered by LP gas, this unit outputs 350,000 BTUs per hour and has a 1-inch rear gas connection with a pressure regulator.
