The Vulcan K12ETT countertop steam kettle cooks food from the sides instead of the bottom, so it cooks fooda€”more evenly than rangesa€”using steam in a hollow jacket between the interior and exterior. For proper operation, water in the jacket must be at a certain level and, if it gets too low, the unit stops operating to prevent irreversible damage. The low-water light turns on to show employees when the jacket needs refilling, so they do not need to monitor it constantly.

When the kettle finishes cooking the food, employees can use the tilt lever manually to pour it out. The large, 12-gallon batch of food can be stored in several different containers and refrigerated until serving time. To withstand heavy use, this Vulcan K12ETT tilting steam kettle is constructed of stainless steel, inside and out. Its internal measurement markings are embossed for durability and the jacket has antifreeze and rust protection. All electronics are contained in a waterproof box on the right.
