The Vulcan K40GLT tilting kettle has a 40-gallon capacity, perfect for cooking soups, stews, and sauces in large batches. Because it uses steam cooking with a self-contained source, it does not require a hookup to an external boiler or steam generator. The unit's jacket surrounds the bottom two thirds of the kettle body and comes filled with water that turns into steam when heated.
Made of 316 stainless steel, the interior liner is more corrosion resistant than 304 stainless steel, so it can be used for acidic products. Because the kettle liner is ellipsoidal, it has a larger capacity than standard models. Markings in gallons and liters are embossed in the kettle, ensuring cooks can measure ingredients when prepping recipes.
After food is cooked in the Vulcan K40GLT steam kettle, it can be emptied into a separate pan or container by manually tilting the unit as much as 95 degrees. The rim is heavy duty, preventing it from bending or denting. A faucet bracket on this kettle enables operators to connect to a constant flow of water for recipes or cleaning.
