A snap-action thermostat is embedded in the unit every 12 inches and are adjustable with front-mounted knobs featuring guards to prevent accidental changes. The griddle plate is 1 inch thick to provide uniform cooking, and it's made of polished steel that can be wiped clean after use. A countertop unit, this griddle measures 36 inches wide by 37 1/2 inches deep by 15 1/4 inches high.

To capture runoff and crumbs, the Vulcan MSA36-30 commercial griddle has a 6-quart grease trough located in the front. Keeping messes from splattering on the unit's surroundings, it's furnished with a 4-inch backsplash and tapered side splashes. It's mounted on 4-inch legs that can be adjusted for stability, and for long-term use, it's made primarily of durable and rust-resistant stainless steel.
