To save space and eliminate the need to purchase three separate pieces of equipment, the Vulcan V2BG8TC gas range measures 36 inches wide by 41 7/8 inches deep by 40 1/2 inches tall; it features two open-top burners, an 18-inch-wide griddle, and a convection oven. Because its front, top ledge, sides, base, and stub back are made of durable stainless steel, it withstands heavy-duty use in fast-paced restaurant kitchens. For stabilization on uneven flooring, it's positioned on 6-inch legs that can be raised or lowered to reduce the risk of wobbling or rocking during use.
The two open-top burners positioned on the unit's left side each output 35,000 BTUs and have individual pilots and controls to enable simultaneous cooking of different dishes. Both burners feature heavy-duty cast grates, with the front grate measuring 11 inches by 17 inches to support small- or medium-size cookware, and the rear grate measuring 14 inches by 17 inches to accommodate stock pots or saucepans. To ease cleaning, this range includes an extra-deep stainless steel crumb tray, and the lift-off grates are separate from the aeration bowl. On the top section's right side, the 18-inch-wide right-side griddle is built with one 30,000-BTU burner and a 3/4-inch-thick ground-steel griddle plate capable of withstanding repeated heating and cooling. Operators can precisely adjust the griddle plate's heat with the snap-action thermostatic controls.
The Vulcan V2BG8TC heavy-duty range's base features a convection oven that uses a fan to circulate heat for quick, uniform baking, roasting, broiling, or rethermalizing. Operators can set the temperature from 175 to 550 degrees Fahrenheit with the corresponding thermostat. This 32,000-BTU unit features a porcelain base, sides, and an interior door panel to ease cleaning, while its heavy-duty counterweight door hinge simplifies pan insertion and removal. Its 27-inch-wide by 27-inch-deep by 13-inch-tall interior includes two racks that can be raised or lowered in three positions to achieve various results.
