For durability and corrosion resistance, the Vulcan VC66EC double full-size convection oven has a stainless steel front, top, sides, and door. To streamline cleaning, the interiors of each oven are porcelain enameled so they can be wiped down. Each deck includes five oven racks that are nickel plated to prohibit wear, and they can be repositioned in 11 different ways depending on need. Because the oven cavities are bakery depth, they accommodate full-size pans front to back and side to side. Double-paned windows on the ovens provide an interior view, and bright oven lights enhance the display so employees can monitor food as it cooks.

The doors on the Vulcan VC66EC electric convection oven open independently, reducing heat loss when the cabinet is accessed. To further retain heat, the ovens include non-sagging insulation. Using computer control operation, employees can adjust the 99-hour timer and select between 100 programmable menu selections. Eliminating guesswork, the controls include a readout of the temperature and time remaining until the alarm sounds. When cooking is complete, users can flip the rapid cool-down switch to make the interior safe for cleaning.
