The Vulcan VC66EC double electric convection oven has two decks that each include five nickel-plated racks, which can be adjusted in 11 positions per deck to enable cooking a range of products. Because the ovens have a bakery depth, they're deeper than standard oven cavities and can accommodate full-size pans front to back or side to side. To monitor food as it cooks, the ovens have double-paned windows on the front, and the interiors are illuminated with lights. Oven-blower motors enable air circulation, and non-sagging insulation prevents heat from escaping the cabinet. For durability and corrosion resistance, the front, top, sides, and doors are made of stainless steel.

When food in the Vulcan VC66EC full-size convection oven is done cooking, an alarm will audibly sound. A readout of the time and temperature is provided on the front of the oven, and computer controls enable adjustment of the 99-hour timer and selection of one of the 100 programmable menu options. The interior of the oven is porcelain enameled to streamline cleaning, and to reduce the risk of burns, a cool-down switch rapidly eliminates heat from the cabinet.
