The Vulcan VC66GC double full-size convection oven is powered by LP gas. Its digital controls feature 100 programmable menu selections to repeat frequented recipes, and its 99-hour timer has an audible alarm that sounds when food is done cooking. Its temperature can be adjusted with computer controls, and it has one 50,000-BTU burner per section. To enable monitoring, the screen features a readout of the time and temperature, and the doors have double-pane windows so employees can check on food as it cooks.

To reduce energy loss, the Vulcan VC66GC double convection oven has non-sagging insulation, and the doors can be opened independently. Interior lights in both decks illuminate the cabinet to enhance the view. The bakery depth of these decks provides the space to accommodate full-size pans in a front-to-back or side-to-side configuration. Each deck comes with five nickel-plated racks that are adjustable in 11 positions for versatile product holding. For resilience and resistance to rust and corrosion, the exterior of the unit is made of stainless steel, and the interior is porcelain enameled to streamline cleaning.
