The Vulcan VC6EC single full-size convection oven comes with five nickel-plated racks to hold product. If needed, the racks can be adjusted in 11 different positions. Because the oven interior is bakery depth, these racks can hold full-size pans side to side or front to back. Its cabinet is brightened with lights and lined with porcelain to facilitate cleaning, and to quickly drop the temperature for another round of baking, a switch rapidly cools down the oven's interior. This unit's computer controls include a roast and hold cycle and a digital readout of the time and temperature. When food is complete, an alarm will audibly sound, and a 99-hour timer eliminates guesswork from cooking.
