For flexible application, the Vulcan VCCG48-AS gas griddle can have as many as four separate cook zones, helping users warm, toast, grill, and fry product at the same time. To enable safe use at temperatures as high as 550 degrees Fahrenheit without cracking or buckling, the unit's griddle plate is 1 inch thick and made of polished steel. Its smooth surface releases stuck-on residue so users can quickly scrape it into the built-in grease trough to prevent build up. Mounted to the unit's front, the grease trough is made of stainless steel and leads to the integrated 6-quart grease drawer.

To ensure the griddle plate heats evenly, the Vulcan VCCG48-AS griddle's aluminized steel atmospheric burners are U shaped and spaced 12 inches apart across the entire unit. Its cooking surface is 48 inches wide and 24 inches deep, providing space for users to cook several items at once. To ensure comfortable access, the thermostat controls are located on the griddle's front, and to prevent accidental changes, they are shielded with chrome wire guards. During use, the griddle's 4-inch backsplash and tapered side splashes contain hot grease and steam, preventing them from striking surrounding walls and countertops.
