The Vulcan VGM36C heavy-duty gas range with griddle top endures heavy use because its front, sides, base, back, and ledge are all made of sturdy stainless steel. The stainless steel griddle plate is 3/4 inches thick to resist warping over time. The 36-inch-wide plate has three separate sections with their own heat dials and pilot flames, meaning a different food can cook in each section simultaneously, and during slow hours, unnecessary sections can be shut off. The plate's back and sides are bordered by the 4-inch-tall splash that catches stray splatter, while the 8-inch ledge on the front can be used to plate dishes.
The convection oven base has a sturdy door attached with counterweighted hinges. Inside, the included oven racks can be slid into one of three positions, and staff can set the temperature at a level between 175 and 550 degrees Fahrenheit.
